Summer Blog Challenge Catch Up! Days 16, 17, 18 & 19!


I've missed a few days, so time for a catch up! :)

Day 16 - Fitness Guru or Coach Potato?

Unfortunately, its the latter! :/ I am not a fan of physical activities, I am the first to admit that! Most of my favourite pastimes (Reading, blogging, watching movies, penpalling, etc) involve me being stationary!!!

I am not supposed to undertake any heavy cardiovascular activities for medical reasons, which rules out a lot of exercise that I DO enjoy (I used to really enjoy Zumba classes) but I have recently started taking yoga classes and I'm hoping to get up the motivation to go swimming regularly starting soon! 

I am going on holiday in November and I do want to feel more in shape by then. 

Day 17 - 3 Things You Are Proud Of About Your Personality?

  1. I am a good listener. My friends often come to me for a shoulder to cry on or for advice, and I am pleased that they feel they are able to talk to me and trust me.
  2. I am good at organisation and arranging fun things to do. My friends are always really complimentary about events I plan, and say I should be a life coach or a party planner and that always means a lot to me. I enjoy being able to provide fun things for people to do!
  3. I am quite a deep thinker - this can be a pain at times as I have a tendency to over analyse everything, but I'd rather be someone who overthinks things than someone who floats through life without ever really taking things in.


Day 18 - A recipe that you love?


My favourite, go-to dinner recipe - Chicken A La King!


You Will Need:



Chicken of your choice (Roast breast, leg meat, fillet, etc) - cooked and torn into strips
1 Green pepper, 1 red and 1 yellow pepper - de-seeded and chopped
1 large onion - peeled and chopped
2 or 3 garlic cloves - peeled and crushed
approx 150 ml of decent quality white wine
approx 500 ml of single pouring cream - possibly more, depending on how much sauce you like
Boiled basmati rice - of your choice, I use boil in the bag for ease!


  • Grease a frying pan or use a little oil, add your onions and peppers and fry off until softer



  • Add your crushed garlic and torn chicken to the frying pan and heat



  • Meanwhile prepare your rice as normal



  • Add wine to the frying pan and reduce



  • Remove from heat for a moment and add cream



  • Stir through and return to a gentle heat for approx 4 mins



  • Serve your chicken a la king over your rice



  • Enjoy!!


Day 19 - Something That You Are Proud Of From The Last Few Days

Hmm, I'd say I'm proud that my business seems to be doing well. I've started some new advertising campaigns lately and I have had a few new bookings over the last few days. This weekend I have two parties booked, which means I stand to make about £300 profit by Sunday evening for about 7 hours work! Woo hoo! :)



I'm also proud of the meals I've cooked this week, as Jon & I are trying to save money and eat out/order takeaways less - so I've been making an effort to make some good home-cooked meals. Not for health reasons (They've not been the healthiest options!) but for the purse strings and so that Jon has something nice and hot to come home to :)

I'm gonna be posting up my week in meals at the end of the 7 day trial period!
