Chicken a la King with Layonaisse potatoes
This is my Mums recipe, its one of my favourites of hers!! Its very rich but sooooo good.
INGREDIANTS:
FOR THE A LA KING:

Chicken of your choice (Roast breast, leg meat, fillet, etc) – cooked and torn into strips

1 Green pepper, 1 red and 1 yellow pepper – de-seeded and chopped

1 large onion – peeled and chopped

2 or 3 garlic cloves – peeled and crushed

approx 150 ml of decent quality white wine

approx 500 ml of single pouring cream – possibly more, depending on how much sauce you like

Boiled basmati rice – of your choice, I use boil in the bag for ease!
FOR THE LAYONAISE POTATOES

Approx 4 medium sizes potatoes – peeled, boiled and sliced

200 ml of single pouring cream

Half an onion – peeled and chopped

approx 250 grams of white mild cheese – grated

1 clove crushed garlic
-
Grease a frying pan or use a little oil, add your onions and peppers and fry off until softer
-
Layer a small baking tray or dish with your sliced potatoes, sprinkle over onions

Mix your crushed garlic into your cream and pour over the potatoes, add your grated cheese and heat in the oven at a medium heat for approx 10 minutes – check often and remove once cheese is set and bubbling.

Add your crushed garlic and torn chicken to the frying pan and heat

Meanwhile, prepare your potatoes and rice

Add wine to the frying pan and reduce

Remove from heat for a moment and add cream
-
Stir through and return to a gentle heat for approx 4 mins

Serve your chicken a la king over your rice, with a side portion of layonaisse potatoes
